Tuna Poke Bowls

A simple, bright, super fresh and seriously delicious dish, that’s quick and easy to whip up! Feel free to get creative with this one and add some of your favourite ingredients or swap out the tuna for fresh salmon.

SERVES 2

INGREDIENTS

½ cup soy sauce
2 tsp grated ginger
1 tbsp oil
2 tbsp runny honey
200g Takitimu raw tuna, cut into small cubes
2 cups cooked rice
1 cup edamame beans (blanched and refreshed)
1 cup carrot, cut into thin strips
1 Lebanese cucumber, peeled into strips
1 avocado, cut into cubes
Sesame seeds, for sprinkling

METHOD

Combine the soy, ginger, sesame oil and honey in a bowl. Add the tuna and marinate for at least 30 minutes.

To assemble the bowls, begin with a generous scoop of rice, arrange the marinated fish, edamame, carrot, cucumber and avocado. Top with a sprinkling of sesame seeds and pour over any remaining juices from the tuna.
